I’ve been making this a lot now that it’s warm out. It lends a really bright, zesty and fresh flavor to lamb as well as to any grilled meat. It’s also really good on a melon salad with a little extra lime and sea salt. Trust me on that I know it may sound weird……but YUM!

Best of all this recipe is so simple and easy to make, you can whip it up in a pinch and it’s bound to impress your guests (you’ll probably impress yourself too!)
- 1 cup cucumber, diced into ¼ inch pieces
- 1 cup coconut milk
- 1 teaspoon lemon zest
- ½ teaspoon lime zest
- Juice ½ lime
- Juice ½ lemon
- 2 cloves garlic, minced
- 2 pinches sea salt
- 1 heaping Tablespoon finely chopped fresh dill
- 1 heaping Tablespoon finely chopped fresh mint
- Combine all ingredients and chill until ready to serve.
