Simple Carrot "Slaw"

An easy, healthy and quick salad that replicates a slightly creamy slaw with the use of coconut cream.
  • 2 cups shredded carrots
  • 2 Tbl coconut cream
  • 1-2 Tbl extra virgin olive oil
  • 1 Tbl lemon juice.
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 Tbl scallion greens, chopped
  • Optional: 1 cup shredded cabbage
  1. Combine all ingredients in a mixing bowl. Allow to marinate until ready to serve.
  2. Before serving, taste for seasoning and adjust salt as needed.
