Berry Gummy Snacks

Simple gummy snacks that anyone can make.
  • ¾ cup coconut milk
  • ½ cup kombucha
  • ¼ cup gelatin
  • 3 large strawberries
  • ½ cup blueberries
  • ½ tsp cinnamon
  1. Combine coconut milk and kombucha.
  2. Sprinkle gelatin over liquid and let sit for about 5 minutes to start to absorb liquid.
  3. Pour liquid & gelatin mixture into small saucepan and heat over LOW heat.
  4. Stir gently until liquid starts to steam and gelatin dissolves.
  5. DO NOT BOIL- it will kill the kombucha probiotics if you do.
  6. Pour the warmed liquid into a blender with the fruit and cinnamon.
  7. Blend on low, then turn up to medium to fully puree fruit.
  8. Pour mixture into a glass or ceramic dish at least 8x6 in size. The larger the dish, the thinner the gummies will be.
  9. Allow to cool for 20-30 minutes, then transfer to refrigerator and allow set- about 1 hour.
  10. To cut gummies, I used a very small pastry cutter, which looks like a tiny cookie cutter. You can also just use a knife and cut the gummies into squares.
  11. If you really want to get serious, buy some "aspic cutters" which come in fun shapes. This way you can pretend you are a fancy french chef!
