Rutabaga Noodles


Rutabaga noodles are my latest obsession! They are just so so delicious and satisfying. Who needs gut-clogging pasta when you can have vegetable noodles? This dish goes with just about everything since the flavor is fairly mild. I buy a spiralizer from amazon to make the veggie noodles, and the ghee I use is from Tin Star (it is amazing, grass-fed, cultured, and lab-tested to be casein free).  You can also use turnips for this recipe, they are pretty similar.

Easy, healthy & fun gluten free noodle recipe that the whole family can enjoy!

  • 2 medium rutabaga (or turnips), peeled except for the purple part
  • 2 Tbl ghee
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme
  • ¼ cup chicken broth (homemade ideal)
  • 2 pinches salt
  • 3 basil leaves, chopped finely
  • Extra virgin olive oil for drizzling at the end
  • Optional: ½ shallot, minced
  2. Spiralize the rutabaga
  3. Heat a saute pan over low, add ghee, then add shallots if using & garlic, stir for about 1 minute.
  4. Add rutabaga noodles, saute for 5 minutes, stir occasionally so they cook evenly.
  5. Add broth, cover pan with a lid.
  6. Allow to cook until begin to soften, stir occasionally.
  7. Add thyme & salt.
  8. Remove noodles from heat when broth is mostly absorbed & noodles are "al dente".
  9. Drizzle with olive oil & basil to serve.
